Chef de Cuisine | Iconic Italian Restaurant

LOS ANGELES, CA

SALARY: $90,000 – $100,000

International iconic Italian concept known for serving thoughtful, innovative, and high-quality food and beverage is seeking a Chef de Cuisine to adopt, adapt, and implement. The restaurant is dinner only and attracts an A-list clientele. Prior experience operating a restaurant with nightly covers of at least 300 covers is a must. A proven track record of efficiencies including labor, inventory, purchasing, cogs will be considered.

CHEF DE CUISINE RESPONSIBILITIES:

  • Menu development and recipe costing 

  • Ensuring that all food meets the highest standards of quality and consistency

  • Hiring and training of culinary team members

  • Maintaining proper ordering and inventory

  • Ensuring best practices for safety and sanitation in the kitchen

  • Keeping track of new trends in the industry

  • Participate in weekly manager meetings and follow-up on assigned ideas and/or tasks

  • Communicate with vendors regarding ordering, new product offerings, pricing, and all other product-related issues

QUALIFICATIONS:

  • 3+ years of experience in a similar position (Senior Sous Chef, Executive Sous Chef, CDC)

  • Italian cuisine background including wood-fire

  • Excellent communication skills and leadership qualities

  • Ability to thrive in a high-pressure environment

  • Creative, innovative thinking

  • Exceptional standards for cleanliness, health, and safety

  • Experience in managing inventory and cost controls

  • Flexible schedule, including weekends, and on holidays
